Sandra Woodruff gives good practical advise on a wide variety of substitutions as well as giving you important information on what needs to be modified to the remainder of that recipe in light of the substitution. Her easy to understand substitutions to lower or eliminate fats and sugars are the basis on which we do all our baking these days. Absolutely fantastic resource for the health concious baker.
