`From a Baker's Kitchen' by poet, teacher, and writer Gail Sher is easily one of the very best books on bread baking I have seen, out of the dozen or so I have reviewed in the last year. This is not to say that the many volumes by Peter Reinhart, Joe Ortiz, Nancy Silverton, Bernard Clayton, and Rose Levy Beranbaum are not some of the very best cookery books I have seen overall. It is just that in this classic tutorial on breadbaking, Ms. Sher has presented this material in a way which is more accessible to more home bakers than the more technical works of Reinhart and company.
One of the most liberating statements early in this book is Ms. Sher's claim that the home bread baker is actually in a better position to bake quality bread than the commercial baker, who is constantly encumbered by pressures to produce a correct number to match sales, use materials and labor economically, and make a backbreaking schedule while maintaining a reasonable quality in their product. Within reason, the home baker should not have any time pressure and the cost of a small quantity of good ingredients should be of no concern. The home cook does need to be aware of things that are no problem for the professional. These typically are using fresh ingredients and sensing baking endpoints simply by sight. The professional baker gets fresh ingredients in daily or weekly and does the same thing daily, so these come naturally.
One of the first things, which convinced me that this is a really great introduction to baking, is when the author gives an overview of all leavening methods, giving each one equal attention. When I started baking, I was fully aware of the importance of yeast and only aware of chemical leaveners in passing. It was almost two years of baking and reading before I realized the importance of aerating leaveners, epitomized by foams of egg whites in, for example, angel food cake, but also accomplished with other ingredients such as butter layers in puff pastry.
The first section of the book deals with `bread ingredients'. While Ms. Sher does not go into as much detail on the chemistry of gluten formation and the biology of the wheat berry as, for example, Rose Beranbaum, this book covers the whole range of flours, including such odd bodkins as triticale, potato flour, and millet. The triticale flour has a combination of properties of wheat and rye, with a light sweetness from the contribution of rye genes.
The second section deals with the `methods and principles of bread baking'. The motto for this book is the first paragraph in the chapter on dough where it says:
`The Point cannot be stressed enough that bread baking is an art replete with choices. You can slow it down or hurry it up, overbake for a crunchy crust or overrise for a chewy loaf with big holes. The correct thing is what you want. You are in control and, if you understand what bread is about, you can tailor any dough to suit your exact specifications.'
What a liberating notion. This whole book, of course, is dedicated to telling you what bread is about.
There are many small things about this book that I love, but the one big thing that will make this book eminently useful to the amateur as an introduction to yeast breads is the fourth section of the book on `the sponge method'. For those of you who are familiar with artisinal bread baking, I should point out that this book simply does not cover this topic. It's strength is in a broad survey of bread baking techniques suitable for the home plus an in depth tutorial on the steps involved in the sponge method using commercially packaged yeast. The main advantages of using a sponge are that it gives the yeast free rein to grow in the absence of inhibitors such as salt and fats. Once the sponge has got a good head start at developing the gluten, other ingredients can be added much more easily than with a conventional dough where the yeast is simply bloomed and added to all the flour and water, followed by salt and fat(s).
Building all the following yeast bread recipes on this one method enhances the careful exposition of the sponge method. This means that the making of each recipe builds on a single skill whereby you become more familiar with all the choices you can make to branch off from one common technique.
Following the exposition of the sponge method and its recipes, the book deals with many different recipes for non-yeast quickbreads such as corn breads, spoonbreads, biscuits, teacakes, batter breads, gingerbreads and muffins. For its size, my favorite section by far is the selection of recipes for leftover bread. You can find dozens of these techniques spread across hundreds of cookbooks on French and Italian cuisine, but here we have all the best ones in one place.
While the book does not go into as much detail as some more recent titles, there is still a lot here I did not know. For example, while many writers have touted instant dried yeast over `active dry yeast', the author points out a few drawbacks of this product. The author also gives an excellent overview of the many different ways bread can be rolled and laid in baking pans and the many different ways in which bread can be scored. I have seen most of these techniques in other places, but this is the only book that pulls all of these things together in one place.
Ms. Sher gives much credit for her inspiration to Elizabeth David's book on English baking. As I am a big fan of Elizabeth David's writings, I am looking forward to reading the fountainhead of Ms. Sher's excellent book.

Realizing that healthy eating involves eating as a family, Tyler Florence has filled this book with recipes that work for everyone in the house. Last night I made Roast Turkey with Herbed Vegetables (page 72). Not only was it easy to make, but it was delicious! Roasting is a nice way to make a flavorful meal without a lot of work. I can throw it all together, pop it in the oven and then play with the baby, or give him a bath while it cooks. The food that I portioned out for the baby and pulsed in the food processor was the perfect consistency for him. The leftovers have kept well and he had "seconds" warmed up today for lunch. He liked the flavors, as much as he does the Sprout baby food pouch meals.
I felt really good about serving my whole family the same meal. This book makes it easy to have a family meal that is healthy, appealing and delicious for everyone at the table. The ingredients are easy to find in the average grocery store provided they are in season, this means a lot to me as I do not want to plan a meal and then have a hard time finding everything I need to make it. The flavors are powerful without overwhelming the sensitive palate of a baby or a toddler, while at the same time pleasing the adults at the table.
This book will see a lot of use in my household. I highly recommend!

This book is just wonderful! I have been baking bread by hand for several years now and have thouroughly enjoyed it, but this book has helped me to stretch beyond the recipe and try some new things. In the past 2 weeks, I think I have made 7 recipes out of this book. I just can't seem to stop. The Bulgur Oatmeal bread, I think, is the best bread I have ever tasted. Absolutely AMAZING! I also made the Sesame Burger Buns, Whole Wheat Long Rolls, Vienna Bread, Pain Campagne and Farm-Style White Bread with Cardamom. I have probably 200 cookbooks and this is my new favorite! A must read!

The point of "Secrets of a Jewish Baker" is not just to provide you with recipes, but rather to help you create professional-quality loaves in your own kitchens. If you find you have difficulty making a truly light and airy loaf of bread, a whole-grain loaf that's tasty as well as nutritious, or a crusty loaf like your favorite baker's, you won't have any trouble with these tasks by the time you've made a few recipes from this book.
The book opens with wonderful notes on basic materials you'll need (as well as optional ones), ingredients, special bakers' techniques, handy tricks and tips to make things easier on yourself, and even a trouble-shooting section to help you figure out what might have gone wrong with a loaf of bread and how to fix it. Usually such sections teach me nothing new; here I definitely learned things.
As for the recipes, they come out nothing short of stunning. The cheese bread disappeared so fast you'd think it had been a figment of our imaginations. Most surprisingly for me, the cracked wheat bread and bran bread disappeared just as quickly-I think of bran as tasteless and unappealing, but these healthy breads were moist, tender, and delicious. The coffee cake made a yummy (if rather sinful) breakfast, as did the peach streusel muffins. The techniques for creating great crusts worked like magic, particularly on the Irish raisin bread, which was similarly delightful.
The book includes a handful of morning "programs" of baking that interleave instructions for several recipes at once, enabling you to easily make a week's worth of bread in one morning. This worked beautifully for us. The recipes also include variations designed for the food processor and the six-quart stand mixer, with different ratios of ingredients to take advantage of those items' form-factors; thus you can easily adapt the recipes to the equipment you have on hand. My only warning is that the stand mixer recipes seem sized to the new, heaviest-duty six-quart stand mixers, so be sure to double-check your mixer's rating for how many cups of flour it can tolerate. (You can always use his basic recipe amounts in your stand mixer if it won't tolerate the higher-quantity mixer variations.)
This is a stunning bread cookbook, particularly for anyone who wants to make professional-quality breads in their home kitchen, or who wants recipes for healthy, whole-grain breads that taste amazing!

I love the style of cooking in this book: relatively simple recipes, most often with everyday ingredients; well written instructions; and a focus on whole foods (including the use of whole grain flours and unrefined sweeteners whenever possible). It is packed with recipes, 240 to be exact, so there options for new vegans (how to use tofu and seitan, for example), and vegan veterans who want wheat and soy-free recipes that creatively incorporate fruits, vegetables, nuts, and whole grains. That said those who are coming from fast food territory will still be welcomed by the author with some shortcut recipes for things like Tofu Dog Bites.
I have reviewed The Complete Idiot's Guide to Juicing (thumbs up) and The Complete Idiot's Guide to Total Nutrition (a disappointment), so I am well aware of the cutesy "Idiot's" format that some may love, some may feel neutral about, and some may be irritated by. At this point, I am pretty neutral, and able to look into the actual substance of the book.
The book starts with an informational section that is about 25 pages long, but it feels fairly complete for its purpose. Beverly touches on health needs and then dives into explaining milk and meat alternatives. Later in the cookbook is a chapter that is dedicated to making your own cheese and dairy alternatives.
Since I am already dairy-free, I chose to sample a recipe that also had a meat substitute vibe, the Savory Mushroom Sausages. The only changes I made were to cut the maple syrup in half (down to 1 ½ teaspoons) and increase the salt by ¼ teaspoon, as we aren't fans of the sweet flavor that many breakfast sausages have. They were awesome! I actually preferred the leftovers, after chilling overnight, as it really gave the various flavors time to meld. This was a soy-free and optional gluten-free recipe too!
I bake my own granola, so I was excited to trial the Vanilla Nut Granola recipe. It used a very different mix of spices, extracts, nuts, and seeds from my standard recipe. I really enjoyed the subtle sweetness and the very nutty tasting blend. All of Beverly's recipes are very easy to customize, so on the next go there are a few personal touches I will introduce. I think swapping the maple syrup for agave (which is half the price in my neck of the woods), and leaving out the pecans (which tended to burn easily) would make it an ideal blend for my household, adding just a slight touch of additional sweetness. Also, she ingeniously uses a blend of oil and water to keep the granola low fat, but we aren't calorie counters around here, so I will probably use all oil next time for a firmer crunch.
I loved the Carrot-Cashew Butter, a simple and thick spread with a light natural sweetness from the two main ingredients. I was also smitten by the Low Fat Miso Ginger Dressing. It was only my second time using miso, and the experience prior left me with a bad taste in my mouth, literally, but Beverly nailed it in the sweet, ginger-rich condiment.
This is definitely a cookbook that will get some mileage in my kitchen. Recipes that are next up on my list include the Maple Pecan Oatmeal Scones (made with rolled oats!), the Thai Peanut Sauce (I can never get enough of that stuff), the Raw Cheddar Cheese Spread (soy-free), the Raw ABC Nut Milk, the Red Lentil Bologneses (I am on a lentil kick), and the Blueberry Corncakes (a twist on traditional pancakes). But don't stop with my selections, there really are tons of different recipes to pick from in this one, from "Decadent Desserts" to "Marvelous Main Dishes."

I checked this book out from the library to test-drive it before giving it a place on my bookshelf. I was annoyed to see that her primary mix was not the usual rice-potato-tapioca mix, instead using sorghum-potato/corn-tapioca, but I had all the flours on-hand so I decided to mix it up and give it a try. I picked the hardest thing I could find (why waste time?): cut-out sugar cookies. I was flabbergasted. They were great. They kept their shape, and the texture and taste were wonderful: no grit! I made biscuits next (another difficult thing to make GF) and they were also great. The pizza crust recipe produces an actual DOUGH that you can pat out with your hands, not the usual batter that needs to be spread with a wet spatula. In the two weeks that I've had this book from the library, I've made seven baking recipes all with wonderful success, including the first loaf of GF bread that I've eaten plain.
It is a BIG book, and it has a bunch of non-baking recipes, which I don't think I'll use. For me, converting main-dish recipes to be GF is not difficult. The sections on baking are extensive, though, and in my opinion, that makes the book worth the price and worthy of a place on my shelf.

I have always had a Betty Crocker cookbook around. It was the first cookbook I took with me when I moved away from home, and it still remains the first book I grab for if I have *any* questions about a recipe I'm making.
The book is great for cooks of all levels. It has a lot of great introductory information - how do you boil an egg? What are the different cuts of meat? It provides a lot of easy recipes that taste delicious and are nutritious as well.
In addition, the book also eases you into many advanced recipes. Looking to cook a Thanksgiving dinner for the relatives? Trying to make a birthday dinner really special? This cookbook has the recipes for you, all easy to understand and with gorgeous photos.
This version is definitely an improvement on previous versions as well. There is information on grilling and vegetarian meals, something lacking in the last versions. They've also added in a number of ethnic dishes that are quite tasty.

A big "Thank you" to Jules for writing this cookbook, and then for having the courage to give it a title that represents the content. As a physician who specializes in food allergies and intolerances I know that many, many people have reactions to multiple foods, and I see more every day. Gluten is getting all of the attention, but the other foods are just as important. There are very few cookbooks available to people with multiple food reactions. I was thrilled when I learned that Jules, an accomplished gluten free author, had broadened her scope and written this book.

I know, that sounds like a wild claim. And I'm surprised I wrote it.
I own both of the previous Eat This Not That books (Thousands of Simple Food Swaps, For Kids!), so when I noticed this one was about to come out I decided to skip it. What more could it offer than what was already in the other two?
Then, tonight, I went shopping for food with my teenage daughter at Target. We spotted this in the little book section and, at her urging, picked it up and glanced through it.
What a great book! So helpful! So useful! Yes, if it keeps my husband healthy and my daughter enthused about nutrition, it gets my vote as best nonfiction book this year. I read about every day, and no book has struck me as a Must Buy as much as this one.
The reason? Since the book is entirely about food at supermarkets, every item on every page is something readily accessible to you. And since every item is captioned with its relevant nutritional information, it's like having the "Nutrition Facts" panel of every major item at your grocery store right there in your purse, in a little book that is so well designed and organized it is remarkably easy to use.
By comparison, the earlier titles had less detailed grocery sections, as well as lots of stuff about fast food chains and table-service franchise restaurants, material that is useful only if you frequent those particular places.
In this book, every page has valuable content for anyone who shops at a supermarket -- so much, in fact, it's tough to determine just what to highlight in this review. Every time I flip through the book I come across useful, surprising information. For example, right now I'll randomly open it a few times and learn why....
1) Fruit Loops are better for you than Apple Cinnamon Cheerios...
2) Regular Cheerios is a better choice than Smart Start...
3) Regular Quick 1 minute Quaker Oats is healthier than Quaker's Simple Harvest Multigrain hot cereal...
4) Dole pineapple cups are more nutritious than Dole mixed fruit cups...
5) Del Monte pear halves beat Del Monte sliced pears...
I could go on forever.
By the way, not all the pages are side-by-side product comparisons. One spread, titled "The Meat Matrix," compares the nutritional value of a variety of meats, everything from pork to ostrich. Another, "The Perfect Refrigerator," displays a perfectly stocked healthy fridge. My daughter was especially interested in a spread titled "The Snack Matrix," which shows which combination of snack items (fruit, peanut butter, cottage cheese) mix well together for both nutrition and taste. Another section discusses how to store fresh fruit and produce and explains why fresh food is better for you.
Until now, I have never used the phrase "book of the year" in any of my Amazon reviews. But this one, at least for nonfiction, just might live up to that claim.

It's hard to find a decent clean-eating cookbook. This one certainly is decent, but I wouldn't give it much more praise than that. There are some recipes that are pretty good and all of them are quite straightforward, but my major problem with the book is that some of the recipes are complete fluff that could have been all compiled onto a single page ("quick bites", or something like that). For instance, the "Fix and Eat Sardine Sandwich". Now, I'm going from memory here, but I'm pretty sure that the steps boiled down to these steps: Take two slices of bread, spread mustard on each slice, then put the sardines between the two pieces of bread and eat them. Sorry, Gregg, but I'm a healthy eater, not someone who's never been in a kitchen before. There are other recipes like this ("Slice up a head of lettuce and serve it with mustard as dipping sauce", for example) that are really wastes of space.
Also, it would have been good to see more explanation regarding carb-cycling (or carb-shifting as he describes it), along with macronutrient breakdowns for the different eating phases Gregg describes in the book.
There's some good stuff in here, that's for sure, but it's too much like a fluffernutter sandwich: lots of healthy potential surrounded, unfortunately, by too much fluff.

Few books prompt me to want to TELL THE WORLD because it may make a big difference in the quality of life of anyone who reads it. This is the first time that I have tried the Zone diet and fish oil supplements so it was all news to me and makes sense. I don't usually buy recipe books but this is more of a guide to balanced eating using raw foods, canned/frozen food, and even restaurant visits. The authors seem to realize that I don't have the time or talent to deal with exotic food preparation. Rather than a long list of food to avoid, this book explains which foods are good, better, and best along with balanced quantities.
Don't underestimate the health effects of the right food if you are currently in pain or taking any medications this book could change your life! A high cholesterol report and watching Morgan Spurlock's movie, Super Size Me, prompted me to pursue some changes in my diet. In the month since entering the Zone I have discontinued Sudafed use (after years on it) and my husband is off of glucosamine and pain free. Plus, we are not hungry, have energy, and sleep better than before. This book ended the confusion I felt about what to eat. I found it very helpful.

This is a very good introduction to cooking with cast iron. The first couple of chapters give you the basics of using cast iron (seasoning, how and what to buy, caring for and using, etc.). The second part of the book has all the recipes with chapters on meats, poultry, seafood, vegetables, breads/cornbreads, desserts, and non-traditional dishes. There is also a chapter on using an outdoor dutch oven and some recipes to go along with that.
Overall, the recipes are good but do use more bacon fat and butter than I would like. Every recipe is accompanied by its nutritional information so you can decide if you need to substitute some of the ingredients or not. The hushpuppies recipe has slightly more than 50% of its calories come from fat so let the cook beware.
Definitely buy this book if your are new to cast iron cooking. If you are a pro, I might hold off as the book will probably be too introductory.

To say this is the ABSOLUTE BEST cookbook for children with allergys would be a HUGE understatement. It does not get any better than this book. Kelly has a true gift. I have several other cookbooks and they are terrible. I love how Kellys recipes are every day household items. I live out in the middle of nowhere and having to find items that my local stores do not sell was very had with the other cookbooks. Then the food would taste like dirt and there were no pictures to see what "said food should look like" Kellys book is the exact opposite. Her recipes are every day ingredients. You can tell she puts her heart and soul into her recipes. Kelly is a lifesaver and I am just so thankful for how much she has helped my family. Not the first person has noticed that any of the foods I have made were dairy/egg/nut free. How wonderful is that?
Like I said IT DOESN'T GET ANY BETTER THAN THIS COOKBOOK!!
I would pay triple the amount... that is how good it is!

I just received my copy of Vegan Lunch Box after much anticipation. I was a fan of the blog that inspired the book and for some reason expected the format of the book to be similar, which is what appealed to me. Unfortunately, the entire book is laid out in a new way.
First of all, there are virtually no pictures (save for a special insert in the middle of the book), and none to accompany the recipes. There are very few set "menus" except in sections for special occasions and a few to kick off your thinking. The recipes are divided into apps, salads, soups, sandwiches, main courses, sides, breads, desserts and beverages, which is useful, though there are a few stand-by recipes in here I think she could have skipped for most of us- veggie dogs and baked beans for example, takes up an entire page.
The recipes go perhaps a bit beyond lunch- I won't be making soups or homemade beverages for my child's lunch box- but that's ok, it makes it a bit more versatile as a book for veggie families.
What I found helpful about the original blog was the creativity of how Jennifer, the author, put the meals together in the bento lunchboxes she created. The combinations of food items and what her child choose to eat and appreciated. It's not the recipes I struggle with, it's how to put together an appealing lunch for a vegetarian child (and one that her classmates will envy!).
That said, this is a useful book and a must have for parents to new vegetarians, and does have plenty to offer the veteran as well. I just wish they had followed the format of the blog a little bit more closely. The book does mention that all the original recipes are on the blog archive- but that's why I purchased the book, so I could have that information in a book format.
