Hempseed has been consumed by humans for over 5,000 years. The Hempnut Health and Cookbook details hempseed's history, its exceptional nutritional value, its medicinal properties and also briefly mentions some of hemp's other uses other than as a foodstuff. Hempnut is essentially shelled hempseed and is possibly the most nutritious plant food on earth. It can be used in many recipes as a replacement for nuts, soy products, grains or even eggs. The Hempnut Health and Cookbook contains 116 easily-prepared, mainly vegetarian recipes. About three quarters of which are either vegan or could be made vegan fairly easily by substituting maple syrup for honey and by replacing the dairy products with soya milk, soya yogurt and vegan cheese. The remaining recipes contain larger amounts of eggs and honey and would be more difficult to convert, especially for the new vegan. It does seem a shame though that we have to convert any of the recipes when the authors are themselves vegan! It's an American book, so oven temperatures are given in degrees F and ingredients are measured in cups.

I found this book in our local library and used it to create a cooking project for a group of multi-age children. We tried the Thumbprint Cookies with great success. Using it gave me a great idea for a birthday gift and I've subsequently ordered several copies at Amazon.
The classic recipes are well-illustrated, easy-to-read and follow, and yummy. I especially liked the numbered step-by-step directions which are easy for children to read themselves. All the recipes feature multiple illustrations and begin with a list of needed utensils as well as ingredients. The author also covers safety issues involving the oven and stove.
After using it for my project I decided to give it, along with a kid-size apron, as a gift for a six-year-old girl. This book offers children and their parents lots of opportunities for fun and learning and will outlast any toy!

This is a delightful cookbook which will light up your taste buds as it takes you into uncharted territory in vegetarian cooking. As the primary cook in a vegetarian household, I often find myself at a loss for new ideas, or uninspired by the typical offerings of vegetarian cookbooks. This book changes all that - I now have a wide range of possibilities that excite me, turning a chore into a fun activity.
Full disclosure here: I tested many recipes during the development of this cookbook. But I knew nothing about Didi Emmons before this testing - and with three young kids and a demanding job, I had no interest when a mutual friend suggested I might enjoy testing recipes and providing feedback. I declined, but the message was lost and a recipe was sent to me. I decided I'd try just one (Chard and Eggplant Salad with Miso-Sesame Vinaigrette). When I put a forkful of the finished product into my mouth, I was shocked to discover how good it was. This was the first of what were to be repeated experiences of finding that, in Didi's recipes, the whole is often greater than the sum of the parts - and that surprisingly good and often completely unexpected synergies develop from her recipes.
After this first test, I was hooked. I tested approximately 30 recipes over the next six months. With few exceptions, the recipes were excellent. In a remarkable number of cases, they were sublime. The "Hip Dip" always goes fast at parties. It's an edamame (green soy bean), cilantro, lime juice, olive oil, etc. mixture with a fresh and wholesome flavor. It's perfect slathered on hearty bread and cut into small sandwiches. Other must-try recipes include: Crispy Rice Cakes on Spinach with Viet Red Pepper Sauce - as visually appealing as it is delicious. Root Stew with Millet Cakes - a perfect winter dish and the first time I've ever found a flavorful way to cook millet. The root stew is excellent on its own, but the addition of the millet cakes creates a wonderful fusion. Also, Crispy Bun (noodle) Tofu - an exquisite combination of cooked, fried noodles with a carrot, red cabbage slaw and a tangy mint/lime juice/garlic sauce - hearty yet light - and scrumptious. And Creamy Parsnip Soup with Horseradish - sweet, filling, and with a delicate bite. And if you're in search of the perfect brownie recipe, look no further. Stowe Brownies are exactly as described in the book - "rich and slightly gooey with a crisp, tender exterior".
This book is also fun to read. It is sprinkled throughout with stories and advice about entertaining, including laugh out loud material about Didi's family and neighbors (especially her parents at the holidays) and advice about such diverse topics as purchasing truffle oil (a must-have item, the wonders of which I discovered thanks to Didi); lighting the wrappers from Amaretti di Saronno crackers and watching them flame and lift off into the air (it really works and lights up a dull party); and how to clean your home in 30 minutes. There's also a comprehensive "friendly guide to unfamiliar ingredients" - with descriptions of ingredients and advice on where to locate them.
If you find that you're stuck when it comes to entertaining with vegetarian dishes, this is a great book to get you out of the doldrums.

I got this after flipping through it and falling in love with the concept. I love that the cost for the dish and cost per person is listed at the top of every page. I tried the Chicken with Figs and Rosemary Wine Sauce (fig season is here, and I wanted to take advantage while I could) and was very pleased with the dish. The recipe is simple to execute, but tasted like a gourmet meal. I can't wait to try many other recipes. This is definitely a keeper!

Whenever I used to go camping...the cooking and food was hotdogs and hamburgs.....no more.....
These recipes are fabulous...I couldn't wait to go to my favorite redwood grove....I just went out in the back yard, got out my dutch oven and fixed up a feast in no time. It was yummy. Dian has done it again....you can't go wrong with any of her books...if you only have one cookbook..this should be it....everything from simple to gourmet...any of her recipes could be cooked indoors...or outdoors...on a grill or on your stove...

This is the second edition of the same named book first published in 1999. The book seems to be written primarily from a dietitian's and psychologist's perspective so there are at times what I consider murky medical advice given, such as Healthy Eating and the concept of MyPyramid. The concept is that if you "stick" to your diet then you will be in control of your symptoms. I only wish! There are some good insights as to how powerful cognitive restructuring can be. One statement that made the book for me was "We recently did a study of the pain experienced by IBS sufferers versus Crohn's sufferers. We found that the pain of those with IBS was every bit as severe as the pain experienced by those with Crohn's disease. The difference between the two groups is: social support. Crohn's disease has more social support". This tells the authors and the readers that suffering with IBS can actually be greater than Crohn's because of the lack of support. To this end, the book does offer some valuable advice to talking to your doctor and learning to take control of your own health.

The basic cookie dough recipe in the beginning of the book calls for TWO CUPS of butter. Yet all the recipes later in the book call for ONE CUP, with the same quantities for all the other ingredients. Could the author have meant 2 STICKS of butter? Someone who isn't familiar with the proportions of ingredients in cookie doughs I'm afraid will end up with grease blobs in the pan. Or else I'm reading it wrong.
Other than that probable error, though, the book is worthy of 4 or 5 stars. It does contain many variations on a basic cookie dough that I think are realistic, appetizing, and usable. I bake cookies for a local cafe and am always looking for new ideas and ways to streamline my operations. This book will be great for that.
