(More customer reviews)Amazon won't let me take all the stars off, or I would. I had a really cool, Garrison Keillor-esque review of this up, complete with a discussion about how I made apple pie with this for Thanksgiving.
What I didn't know yet, was that this is not, in fact, actually gluten-free. Then I got a nasty surprise--two days of gluten-symptoms. (The five non-celiac family members who very kindly had a gluten-free Thanksgiving with me didn't get sick at all.)
I looked around online, and in some of the celiac forums--apparently Arrowhead Mills doesn't have dedicated, meaning 'gluten-free only', lines.
So, this isn't gluten-free. It's not even close.
Don't despair, though: there are other companies that had the same idea, specifically, The Gluten Free Pantry makes a basic flour mix with the same ingredients. I can't find anything online that says anyone has ever had a problem with them. (In fact, they are on Clan Thompson's recommended gluten-free list.)
Clan MacDuffie over here thinks we'll go with them instead.

(More customer reviews)I mash up a banana with this, add some walnuts, olive oil and cinnamon and a dash of cloves to make muffins. As a diabetic, I can't deal with processed flour or even whole wheat flours. As this is 100% beans, it has nutritional profile of beans not flour, so I have no problems at all. I don't use any salt. If you wanted you could use salt, but you don't need to use any. I haven't used it for anything else yet.

It goes great with things like apples or peaches, cinnamon, walnuts, etc. It works best mixed with other GF flours. It can be a little strong on its own. I like the 6-month subscription plan. It almost makes it affordable.

I made Ghirardelli chocolate chip cookies following the directions on the package, just substituting Namaste flour for the regular and they came out great! My husband cannot believe they are gluten free! I am so happy to find this product and I will be using it in all my recipes that call for regular flour. I threw out my bag of gold medal flour and am now confident I can bake gluten free! I can't wait to try other products from this maker.

(More customer reviews)I buy this flour for our younger son who is on Glutet-free/Casein-free diet but all family enjoy teff pancakes.
Recipe cannot be easier:
- 3 large eggs,
- 2 tbs of fructose or honey (can be substituted with sugar),
- 4 cups of spring water,
- 2 + (1/4) cup of teff flour,
- 1/2 tsp of baking soda + 2 tsp of freshly squeezed lemon juice (you can add this mix at the end as a multi-purpose rising agent for any baking).
Usually I use two 10" frying pans at once to make flat pancakes as fast as possible.

(More customer reviews)There's a recipe on the back of the package for rice flour muffins - I follow it to make the best banana-blueberry muffins that are light and fluffy - just as good as wheat! I usually mix the white rice flour with equal parts brown rice flour, and instead of 1/2 cup fruit juice, I use 3 overly ripe bananas - the recipe hasn't failed me yet! Even better: they freeze really well, so I can make a double batch and pop them into the freezer for later.
I've also tried the pie crust recipe - it's OK - instead of rolling it out and trying to get it into the pie pan (it breaks apart too much) I just mix into a ball and smoosh it into the pie pan.

Some were OK, some failed in texture, some failed in taste, some were downright inedible. With Beth's Gluten-Free All-Purpose Flour, I've finally found a product that works in most of the cookies, tea breads, muffins, and so on that we all enjoy, and is also affordable for everyday use. It can be substituted in an equal quantity just about anywhere a recipe calls for "all purpose flour" - obviously you'll need to experiment if you use it for yeast breads. Oh, and by the way, it doesn't taste "gluten-free". We had a very merry Christmas at our house!

(More customer reviews)This flour works fine for certain things, depending on your taste preferences. It has a very strong aftertaste (kind of bitter/sour) because of the bean flour. Thus it is pretty strong in plain breads and rolls. If you don't mind that, then good for you! (My husband is pretty sensitive and can't tolerate the bean flour or taste very well.) I found it works better in cookies, chocolate or spice cakes, brownies, banana bread, and pizza dough. Because these baked goods are made with other strong flavors, they help mellow out the bean taste which can be pretty overpowering if you don't have something with which to temper it. I like the consistency of this flour better than the rice flour blend I've also been using but again, consider your taste preferences and what you'll be baking/cooking with it.
