If you suffer from food allergies (gluten, casein, sugar) this book is for you. Kelly Brozyna's recipes are unique and original and are so delicious they make you forget what you had to give up because of allergies. The photographs look great and the recipe instructions are easy to follow. Ms. Brozyna kept in mind that most people don't have a lot of time and her recipes are not time consuming or complicated. There is also an informative section in the beginning that deals with food storage, sugar avoidance, natural sweeteners, autism, and all around healthy living. I highly recommend the almond muffins, custard pie and broccoli quiche. I look forward to making and eating a better variety of "safe" foods with The Spunky Coconut Cookbook!

I pre-ordered the cookbook, and was pleased when it arrived from Amazon a day before the official release date. Having worked on projects as a freelance website copywriter for Laura Trice's healthy cookie company, I was eager to see what kind of healthy snack recipes she would create. Although I consider myself a good cook, I generally don't have time for lengthy, complicated recipes, so I was happy to see that most of the selections had few ingredients and a short prep and bake time. I also found the beautiful color photos to be very enticing.
I decided to try the Whoopie Pies made with the One Pan Eggless Chocolate Cake recipe. I couldn't decide if I would rather use the Fluffy Marshmallow Frosting as suggested underneath the photo, or make the Natural Whipped Cream, so I did both. The recipes were easy to follow and came out well. I did have to adjust the bake time slightly on the cake- not a big deal. Everything tasted great! The cake had a moist, chocolaty texture that was sweet, but not overly so like traditional cake. The Fluffy Marshmallow Frosting was light with a nice maple taste, and the Natural Whipped Cream was creamy and sweet without being overbearing. I also tried Grandma's Gingerbread Cake and topped it with the Natural Whipped Cream. It, too, was easy to make, and had a rich flavor that reminded me of spice cake. I have a terrible sweet tooth, and wished the cake was a little sweeter, but I found it was a wonderful complement to my morning cup of coffee and much better than a doughnut.

I must say that for me Bob's Red Mill Coconut Flour has been my latest
favorite find. Overall, I am a stickler for quality and this brand
has that base covered.
I have added this Coconut Flour into my smoothies with fab results.
My intial reason for purchasing this product was not as a "sub" flour to use as baking, but rather as an easy, quick and hopefully nice tasting fiber boost. Heck, it doesn't add any sugar. Carb level is fine, fat level is fine (for my purposes). Well, nice tasting it certainly is!
The texture is as fine as baby powder. Blends in seamlessly to my smoothies and now I have started to add to my homemade sauces and dressings. It adds to the smooth texture & consistency, nice subtle flavor
and for the fiber boost.
This product does not have a "bowl you over" coconut flavor.
In fact, when I use quite a bit of it in my smooties, it has a slight
hint of coconut ... not even enough to register on my boyfriend's unsuspecting palette.
Don't rely on published recipes to harness the value of this product.
Explore and do what you want.
NOTE about the fiber boost: My latest research points to 35g of fiber
being a target amount for daily consumption. I add a fiber boost here and there and it adds up
