The Complete Idiot's Guide to High-Fiber Cooking Review

The Complete Idiot's Guide to High-Fiber Cooking
Average Reviews:

(More customer reviews)
All I ever want in a cookbook is fast and easy recipes with ingredients that I do NOT have to hunt for all over hell and creation. I LOVE unique and interesting foods, but sometimes you just want a book of simple recipes that you can whip together. And by whip I mean reach into your fridge and cabinets, find what you need and cook it, all under 20 minutes. Most of the recipes in this book fit that bill. The ones that don't, they just take longer than 30 minutes, but still have great ingredients.
I grabbed this book at a bookstore because I was having an impatient day and it had the most appealing recipes that did not read like a "Best of Emeril Lagasse" cookbook. (And I do love me some Emeril recipes!) What I saw looked like ingredients I can get at my local, rural grocery store. I don't want to have to make a 90 minute trip into the city for ingredients that need to be used within 4 days or they spoil. That's a special weekend menu idea, not an everyday thing.
With all of that said, this book is lovely. It's broken down into parts like an Intro, breakfast and brunch, snacks and beverages, lunch, dinner, sides, and desserts. Those sections are further broken down into chapters. For example, in Breakfast and Brunch, you've got Hot and Cold Cereals, Muffins/Scones and Griddle Cakes, and Eggs/Omelets and Frittatas. Snacks and Beverages has Dips and Spreads, Appetizers, Nibbles and Trail Mixes, and Smoothies and Shakes.
Further, I am a BIG fan of natural ingredients. No fake sugar, no margarine. I want real butter, real sugar....all in moderation. Several other cookbooks that appealed to my other requirements failed in the no-fake-food department. I REFUSE to use Splenda in my cooking. So, if you're not shy about real food, you'll be all set here. As far as calorie count goes...it ranges from around 100/150 up to 700 or so for the dinner recipes. Its mixed well, so you can skip the really high ones and still be getting your money's worth.
The soups sound yummy, I can't wait to try them.
I think this book is a great investment. I have no regrets paying a little more in a bookstore for it. I can't wait to try some of the recipes.

The Fiber for Life Cookbook: Delicious Recipes for Good Health Review

The Fiber for Life Cookbook: Delicious Recipes for Good Health
Average Reviews:

(More customer reviews)
In The Fiber For Life Cookbook, acclaimed natural foods author
Bryanna Clark Grogan's challenge is to make us believe that "fiber" and "gourmet" can be used in the same sentence. With all of the attention focused on protein, fats, and carbohydrates today, fiber has been virtually ignored (except for Weight Watcher's, which made the connection between fiberous foods and weight loss many years ago). Simply put, when the outside layer of seeds, fruits, legumes, etc., is stripped away in a refining process, dietary fiber is also discarded. Grogran explains that dietary fiber is responsible for balancing alkalinity and acidity, and for detoxifying chemicals in the gastrointestinal system that can cause diseases such as cancer. Without fiber in our diet, cancer-producing toxins are produced in the gut by bacteria that flourish in a fiber-deficient system. When this occurs, Grogan points out that constipation may be a precursor to such life-threatening diseases as diverticulitis, large bowel cancer, colon cancer, breast cancer, gallstones, hiatus hernia, varicose veins, obesity, diabetes, and hemorrhoids, many of which do not occur in those consuming a high fiber diet. A chart of "Fiber Superstars" lists 50 foods containing at least 4.5 grams of fiber per serving (a cup of kidney beans contains a whopping 19.4 grams of fiber!). This informative chart is now on my fridge. Another chart lists the fiber and calorie content of over 100 name-brand foods. Sample menus, with suggestions for increasing fiber, are listed for meals and snacks. Over 150 pages are devoted to recipes for breakfast, breads, appetizer/snacks, salads/dressings/sauces, soups, beans, vegetables, grains, and desserts. With a flair for international cuisine, Grogan circles the globe with her inventive Yemiser Wat (Ethiopian Spicy Lentils), Eggless Crepes, Pizza Dough with flax seeds, Pasta Alla Primavera, Vegetarian Feijoada (Brazilian Black Beans), Chiles Rellenos Casserole, Red Lentil Dal, French Strawberry Pie, and Italian-Style Apple Tart, to name but a few of the mouth-watering, high-fiber, vegan dishes. I highly recommend this book to anyone who doubts that the words "fiber" and "gourmet" can indeed be used in the same sentence.

I am loosing on average of 5lbs per month so I wanted to look at a book that would help me continue to reach my goals. I have made several recipes from this book. Peanut Butter milkshake, Strawberry & Banana french toast and Broccoli soup - loved them and did not feel hungry after eating these items. I did substitute egg beaters and Splenda for some of the items and my husband and I both enjoyed. I would highly recommend book.

While common dieting wisdom suggests that those who need to lose weight must be eating too much, the newest discoveries in weight loss science now reveal that what's not being eaten can hinder weight reduction. Fiber is turning out to be the silver bullet of dieting—because it can fill you up on fewer calories, dampen cravings for fattening foods, and dramatically improve your overall health. Consuming the right amount of dietary fiber can have profound health benefits. It can cut the risk of heart disease by 30 percent; lower cholesterol by as much as 13 points; decrease inflammation; drop blood pressure; balance blood sugar; improve memory; reduce the risk for breast, colon, and endometrial cancer; and boost the immune system. Unfortunately, ramping up fiber levels too quickly can also cause digestive distress. With an easy-to follow, 4 week plan, Prevention's Fiber Up Slim Down Cookbook shows how to switch over to high-fiber living without experiencing excessive gas or uncomfortable bloating. Of course, for any weight-loss plan to work, the food must be fabulous. Prevention's Fiber Up Slim Down Cookbook is packed with more than 200 delicious, fiber-rich recipes that work with any fiber-rich diet plan including home-style dishes like Roasted Sweet and Russet Potato Salad and Mom's Turkey Meatloaf, tasty new favorites like Curried Beef with Pineapple and Coconut, and sweet treats like Ginger–Sweet Potato Cheesecake and Pumpkin Fruitcake.

366 Delicious Ways to Cook Rice, Beans, and Grains Review

366 Delicious Ways to Cook Rice, Beans, and Grains
Average Reviews:

(More customer reviews)
This is one of the best cookbooks I own (and I own a lot of them). Chesman starts out the book by going through everything you really need to know about legumes, rice and grains -- the different types, how each should be bought, stored and used, what each is good for, what each tastes and feels like in the mouth, etc. Her shopping and storing tips are worth the price of the book alone, but the recipes take it into the realm of the sublime. The book is well organized by broad chapter, e.g., beans, or rice & beans, with a clear listing of the recipes in each chapter and then the recipes themselves. Each recipe opens with a brief description of the dish or a positive feature about it and is then followed by a very clear list of ingredients and cooking instructions that are almost impossible to mess up. Chesman also gives nutritional content info including the overall protein, fat, sodium, and fiber of each dish, as well as the percentage of calories from fat. Most of the dishes are, or can very easily be, vegetarian, but she gives instructions on how to add meat and make certain dishes more traditional, such as adding salt pork to boston baked beans. She also gives alternatives such as turkey bacon for some dishes, so that the recipes can be adapted for vegans, non-vegan vegetarians, non red-meat eaters, etc. So far I have made Mediterranean White Bean Soup with Fennel, Pasta with Broccoli Rabe and Chickpeas, and Brown Rice and Lentils. All have been unbelievably great and really easy. The dishes freeze well so busy people can make a lot and freeze them in single-serving bowls, or have a party and feed a lot of friends or family without a lot of work.
This book has a lot of great ways to add vegetables and protein to one's diet and get a lot of flavor without a lot of fat. All cookbooks should be this great. I can't recommend it highly enough.

Andrea Chesman presents 366 creative and flavorful "natural gourmet" recipes using a wide variety of beans and grains, like basmati and jasmine rice, adzuki beans, amaranth, and quinoa. Organized by course and main ingredient, these dishes range from light and lively starters to hearty and soul-satisfying foods that stick to your ribs but not to your waistline.American favorites are well represented here, but adventurous cooks will be pleased to find ethnic cuisines dominating this mouthwatering collection, including such recipes as: * Spicy Vegetable Couscous * Pesto Pasta with Cranberry Beans * Smoky Black Bean Burritos * Jamaican-Style Rice and PeasThis wonderful addition to our 366 Ways series features foods that are among the most versatile and healthful in the human diet, not to mention absolutely delicious. * Recipes are high in flavor, low in fat. * Each recipe includes a detailed nutritional analysis, which counts calories, fat, percentage of calories from fat, protein, fiber, sodium, and calcium. * Vegetarian dishes dominate the collection, but healthful variations include salmon, shrimp, and chicken.

Red River Original All Natural Hot Cereal, 16-Ounce Boxes (Pack of 6)

We first ate this cereal during a trip to Canada several years ago, add a little brown sugar and milk & WOW! This hot cereal tastes better than what we normally get here in the states. I have ordered it several times. Yes, you get 12 boxes, but you can either give some to friends (and get them hooked) or you can freeze the boxes until you need them. If you live in Minnesota you can find this in the grocery store; wish it were sold all over the country.

I got a few packages of these... used some for my daughter (for the Omega-3 fatty acids, as they help with brain function... she is speech impaired) and for my grandpa (who has high blood pressure & had a stroke.)
You simply add a few spoonfuls to your oatmeal... my grandpa's cholesterol went down 50 points in one month. (None of his medication had been able to do that.)
My 5 y.o. daughter didn't notice this in her oatmeal... I tried it, and there is no added taste, just health benefits :)
Great product. We always have it at our house.

Country Choice Organic Multi Grain Hot Cereal, 18-Ounce Canisters (Pack of 6) Review

Country Choice Organic Multi Grain Hot Cereal, 18-Ounce Canisters (Pack of 6)
Average Reviews:

(More customer reviews)
The Country Choice brand is domestically produced and certified organic by Oregon Tilth.
I bought the Multigrain Hot Cereal the first time by accident instead of the steel cut oats but decided to try it rather than return it and was pleasantly surprised.
It contains rolled whole grain rye, barley, oats, and wheat in that order. It is a great hot breakfast on a chilly morning and a nice change from oatmeal. I like it slightly undercooked and topped with a sliced banana and raisins with a splash of milk.
As far as nutrition, a half cup has 5g of fiber!
Even if you don't like oatmeal, you might want to give this a try.

All-Bran Bran Buds, 17.7-Ounce Boxes (Pack of 4) Review

All-Bran Bran Buds, 17.7-Ounce Boxes (Pack of 4)
Average Reviews:

(More customer reviews)
I bought this product because I wanted to eat a healthy cereal and at the same time add more fiber to my diet. I chose All Bran because it did not contain aspartame. I got home and started reading the ingredients & realized the second ingredient is sugar and also contains high fructose corn syrup. It has 8 grams of sugar per serving, but they list a serving as only 1/3 cup. Who do they think they are kidding? An average American eats more than that for breakfast. Do they think consumers are stupid?
A box of Kashi 7 Whole Grain Flakes with Black Currants & Walnuts cereal lists a serving as 1 cup and contains only 10 grams of sugar for that whole cup. Uncle Sam cereal with Real Mixed Berries contains NO added sweetner of any kind and 1 cup of it contains only 2 grams of naturally occuring sugar coming mostly from the berries. Wow! You mean a cereal manufacturer is brave enough to make a cereal without adding sugar? Yes and it is good. In comparison eating 1 cup of All Bran Buds would be consuming 24 grams of sugar. No thanks!
If anyone at Kellogg's is reading this please know that people who are buying these types of cereals are not buying them primarily for the taste but for the health benefits. We are not the "Kindergarten Crowd" who needs sugar added to everything to get us to eat it. If I want to consume extra sugar I'll eat a cookie once in a while as a treat. If I am going to eat a cereal everyday to incorporate fiber into my diet it is not going to be one that has unneeded amounts of sugar.
Why can't the big name cereal manufacturers use stevia as an alternative sweetner? It has been used for years in Europe with no known side effects. The consumers buying these types of cereals who are trying to watch their sugar consumption and increase their fiber would gladly welcome less or preferably no sugar or a healthy sweetner such as stevia.

These are the best muffins in the world that you can make right at home. Betty Crocks are too sweet. I remember we bought giant boxes of these at a large wholesale warehouse when I was younger and I used to take out a package of the mix and a can of the blueberries on my babysitting overnights. I would make warm muffins for the children I used to watch and they thought I was the best babysitter they ever had. LOVE IN A MUFFIN!!!!

I was very disappointed with this Krusteaz Banana Nut Muffin Mix. I've used this brand many times and have never been disappointed before but this muffin mix is HEAVY and almost tasteless. The banana and walnut flavors should stand out but they don't with this mix. Don't get me wrong.....there is nothing wrong with it but it just does not bake and taste like other Krusteaz mixes that I've tried so my anticipation has tainted my view of this product. I suggest you try a box from the local stores before actually buying a case from Amazon. You may love it or, like me, don't find that it bakes into a very good muffin.

I love cereal. I'm like Seinfeld where he has all those boxes of cereal in the kitchen except I have more. At any given time I'll have 10-20 boxes of cereal in the house - different kinds. They keep a long time unopened so I stock up when I see a good deal. This cereal is one of my favorites. The taste is really good. If you like blueberry taste this is for you. I also love that it's a lot healthier than many other cereals with it's high fiber content.

I found these muffins in my local supermarket about six months ago. They were easy to make and they come in two more flavors however Banana Nut is the best. Considering the fiber I thought they would taste nothing like muffins but I was pleasantly surprised "no tree bark here". Betty Crocker Muffin Mix, Wild Blueberry, 18.25-Ounce Boxes (Pack of 12)
Average Reviews:

I use two cans of the blueberries with one packet of the muffin mix for 6 jumbo muffins. Later, I add 1 tsp cinnamon to the extra mix packet to make apple cinnamon muffins. All the directions are the same, except add 2 peeled, cored, and finely chopped apples at the end (instead of the blueberries.) I make 6 jumbo muffins and bake them for 25 minutes at 350. As the oven heats, I heat the pan, then spray it well with food release spray, this makes for an easy release, because (I was told by a pro) the pores of the pan are open and really seal to the spray.)
Whatever you do, don't heat the oven over 375. They burn. (Each of these muffins (whether apple or cinnamon) count as one fruit serving, since they each contain enough fruit.)
OR: Even better, you can substitute Bobs Red Mill Golden Flax Seed meal for ALL, or half, (start with half) of the fat! Try this! The muffins are actually MOISTER and stay FRESH longer, PLUS they pack a WOLLOP of GOOD fats and FIBER, and many other nutrients - without ANYONE noticing! Golden Flax is the sweet, tastiest flax, so dont hesitate to try it! Bob's Red Mill Organic Golden Flaxseed Meal, 16-Ounce Packages (Pack of 4). PS These muffins can be stickier on the pan, so HEAT the muffin tin while the oven preheats, then SPRAY thoroughly inside, even letting the pan release spray pool a little in the bottom. Instant Release! (You also get a nicer "crust" by preheating the pan.) These disappear FAST at our house, but of course I dont tell anyone (all males) that they are HEALTHY! Enjoy!
